Ingredients:

5 LeafBasil
6 Cl.Gin Mare
2 Cl.Lime Juice
0.1 FruitPineapple
25 SeedPiñones chinos
2.5 Cl.Sirope de arroz biológico

Preparation:

Previous step: spray the Chinese pine nuts and reserve.

Preparation: In a mixing glass add basil leaves, Chinese pine nuts powder, 6 small pieces of pineapple (about 100 gr) and muddle all the ingredients. Add the other ingredients and shake it vigorously. Serve into a cooled cocktail glass using double strainer and garnish.

Garnish: basil leaf with Chinese pine nuts.

Inspiration: Paolo tells us about his cocktail ... "I wanted to use as the main ingredient the basil herb, which means a synonym for Italian people of pesto pasta. Then, looking for references it caught my eye that a Chinese recipe that uses rice, pineapple and pine nuts is a recipe as known in Chinese as the pesto is in Italy. So I decided to test the pinion and using it as a common ingredient in both cultures and in this recipe.

The name is of course for their ingredients: Rice syrup with a nice flavor, with notes of caramel, gluten free, is a very good source of energy and is slow and easy assimilation drink. Basil is great (and not just for pasta pesto), it is used in medicine almost more than in the kitchen. It is digestive, diuretic, has a sedative effect healing and antiseptic, anti inflammatory and analgesic. Pineapple is also digestive and diuretic.

Something that I love about this cocktail is thats besides its density provide by the pinions, it is balance mix where all the ingredients used are perceived.”
