Ingredients:

4 BlowBitter de Lavanda
2.5 Cl.Pedro Ximenez
5 Cl.The Glenrothes Vintage Reserve

Preparation:

Aged cocktail during 30 days. Barrel inherited from Miguel Figueredo.
 
Aged process: "Toasting" the barrel with mezcal, for 7 days to get a tan and smoky notes. "Wet it" every day to help the wood not dry. 

Preparation: Stirring. Serve with blue cheese, truffle honey and lavender. He uses Pedro Ximenez "Fernando de Castilla" and it is served into a Coupette glass.

Note: the name of the cocktail is inspired in the "Delicatessen" concept, a sophisticated-high quality product. 
 
This cocktail is part of the II Vintage Perfection Cocktails Edition - The Inheritors, the Spanish innovation project of cocktails matured in barrels by The Glenrothes.
