Ingredients:

1 BlowAngostura Bitter
4 Gr.Gelling
2 Cl.Mango fruit - Extract
5 Cl.Sea Gin
1 Cl.Triple Sec

Preparation:

Ingredients:
-To emulate shellfish flesh
* 5 cl Gin Sea
* 1 cl Triple Sec
* 2 g Agar Agar
* Water

-To emulate the coral
* 2 cl Mango extract
* Dahs of Angostura
* 2 grs Agar Agar
* Water

Preparation:the shellfish flesh and the coral are prepared in the same way. First, in a bowl hydrate with water the Agar Agar and strain. In a recipient add all ingredients and heat before it boils and include the Agar Agar until diluted. Remove from heat and set aside for 2 hours. Then chill in refrigerator for at least 3 hours, give it the shape you want and place the solid cocktail on a scallop shell.

Inspiration: Ivan was inspired by the popular cocktail club in New York opened in 1929 using the Gin Sea with Galician roots. With the gelatin, is emulated both sides of the scallop, flesh and coral on a real scallop shell. More info about Ivan here.
