Ingredients:

1 BlowHomemade Orchid bitter
2.5 Cl.Plum syrup
6 Cl.Zacapa 23

Preparation:

Previously: in a small recipient with sherry wine, smoke with American oak, close it and shake. This smoked sherry will be used to perfume the ice in the mixing glass.
The plum syrup is macerated with American whisky.
Finally, over the cocktail it will be added a Pedro Ximenez foam (you will need soy lecithin and a turmix).

Preparation: in a mixing glass add 5 to 7 rock ice, a dash of soaked sherry and perfume the ice. Discard the excess of water. Then add the rum, the syrup and 5 dashes of bitter. Stir for a few seconds and serve into a chilled cocktail glass.

Garnish: top Pedro Ximenez foam and black chocolate with nuts grated.

Foodpairing: Zacapa rum caviar (spherifications) and cotton candy clouds.
