Ingredients:

2 Cl.V.E.P Yellow Chartreuse
0.5 Cl.KKO Cocoa Spirit
3.5 Cl.Pear Juice no sugar included
0.5 Cl.Homemade Syrup
1 BlowSpiced Chocolate Bitters
6.5 Cl.The Glenrothes Vintage Reserve

Preparation:

Previusly: aged cocktail during two weeks in barrel. The homemade syrup is a "Fake Tobacco Syrup" based on an original tobacco syrup. George searched products that replaced the feeling of the tobacco, spyce in the tongue and with an after taste of fermented leaf, very similar to the original syrup but without the nicotine or tar. He used a mix of tea, cinnamon, cayenne, ginger, sugar and some NMS of The Glenrothes so it has more alcohol and less caloric value of sugar.
 
Preparation: add all the ingredients in a shaker with 3-5 rock ice and shake. Serve in a Vintage Glass.
 
Garnish: Bitter Chocolate bars with the shape of the clock pointers with golden flakes inside. It goes with a crosswords.
 
About the idea: George wanted to play with the concept of the time. As he explains himself: "The time the whisky is in the barrel, the time we have the cocktail in the barrel, and what we all do while we wait that something magic happens inside the barrel. That valued time concentrated in a drink but that we have to spend killing hours. 
Supporting this idea, he found some products that are mostly aged in wood. Therefore, we have a mix of ideas and products that assembled in the wood as in one drink.
 
Aged cocktail. "Vintage Perfection Cocktails" is the project driven by The Glenrothes, that brings together the best bartenders in Spain for the creation of cocktails based on a traditional process of aging in barrels.  More info about the aging process of this cocktail here
