History

Since 1795 the symbol of the Cuervo represents the family name. In fact, the origins of tequila are necessarily linked to the Cuervo family. Currently, José Cuervo has bottling plants in the Mexican state of Jalisco and the United States, with a production of 230,000 liters a day.


Description

Cuervo Tradicional is a Premium Tequila 100% Agave Reposado up to 9 months in American oak barrels, and has a 38% of alcohol content. Once the Blue Agave is matured, the plant from which tequila is produced (it takes between 8 and 12 years), the jimadores (Agave manipulators) prune the leaves leaving the center of the plant. These are cooked 12 hours and then are taken to a mill where the fiber is separated and extracted juices and honey; sugars and vanilla are added for fermentation. So it becomes a mixed tequila. Then distilled. A quality tequila is distilled twice to extract the most of its impurities. All Jose Cuervo tequilas are distilled twice. Fermentation takes place after aging. The maturation time varies between different types of tequila: in reposados is two months to a year.
