Description

It is made from the organically grown grape varieties that are most representative of the region (xarel•lo, macabeu and parellada) and has a small trace of the foreign Chardonnay. All in all, it makes this, a very special cava.

 

Varieties: 40% Xarel•lo, 40% Macabeo, 10% Parellada and 10% Chardonnay

Appellation: D.O Penedés
Alcohol by volume: 11.5%


Tasting notes

COLOUR: yellow straw colour with some green glints and very fine pearls. Delicate and elegant pearling.
NOSE: At first there are lovely white flowers and citrus fruits aromas. Later other aromas come to the fore, such as honey and concentrated jammy fruit.
PALATE: On the palate is silky and fresh, there is a good balance between acidity and sugar. The finish is lingering.


Observations

Organic Wines and Cavas.
Production: mechanical harvest at low temperature.
Fermentation: first fermentation in stainless steel vats at a controlled temperature. Second fermentation in bottle according to the Champenoise method.
Ageing: minimum ageing of 12 to 15 months in bottle in the vat cellars at a constant and natural temperature of 16ºC.
Food Pairing: this cava pairs very well with risottos, seafood and poultry. However its complexity and freshness would invite pairings with fusion cuisine or the simplest traditional dishes. Serve between 5ºC and 6ºC.
