Bronx cocktail with goat cheese fritters

Gin Mare / Víctor García de Haro

Cocktail: Bronx

Ingredients:
3 cl Gin Mare
1.5 cl Noilly Prat Dry Vermouth
1.5 cl Martini Red Vermouth
3 cl Natural Orange juice



Preparation: mix all ingredients in a shaker with ice. Shake and strain into martini glass, previously frozen.

Food Pairing: goat cheese fritters with saffron marmalade, orange and pear.

Ingredients:
200 gr Flour
Butter 100 g
1 egg
One loop of small goat cheese
1 tablespoon orange marmalade
1 tablespoon water pear cut in small pieces
200 ml sunflower oil
20 ml extra virgin olive oil
Salt
Herbs of saffron

Preparation: wrap the goat cheese cut into pieces covered by the fruit and saffron marmalade in the breeze mass. Close it and fry in sunflower oil.

Breeze mass: on a flat surface, make a volcano with the flour. Inside, add the butter, the salt and the egg. Mix until you have an homogeneous mass. Shape it like a ball and cover with plastic wrap. Leave it in the refrigerator a few minutes. Spread the flour within the work area and, using a rolling pin, roll out the mass. Cut it with a round cookie cutter.

Saffron and fruit marmalade: put the olive oil into a pan and heat, add the saffron and, when brown, the orange marmalade and the natural pear.
